Ever since we started working on this concept, our chefs have been rethinking how to use the less wanted parts of our produce, working together to reconceive “waste” that occurs in the food chain.


We are so inspired, creating something delicious out of the ignored or un-coveted you might see some of the dishes will actually make it to our menus like our used coffee grounds biscotti and curried cauliflower hearts sandwich
